Ingredients:


- 1 cup all-purpose flour


- 1 tablespoon sugar


- 1 teaspoon baking powder


- 1/2 teaspoon baking soda


- 1/4 teaspoon salt


- 1 cup buttermilk (or substitute with 1 cup milk + 1 tablespoon vinegar or lemon juice, let sit for 5 minutes)


- 1 ripe banana, mashed


- 1 egg


- 2 tablespoons melted butter


- 1/2 cup fresh or frozen blueberries


- Butter or oil for cooking



Instructions:


1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.



2. In another bowl, mix together the buttermilk, mashed banana, egg, and melted butter until well combined.



3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; it's okay if there are a few lumps!



4. Gently fold in the blueberries.



5. Heat a non-stick skillet or griddle over medium heat and add a little butter or oil to coat the surface.



6. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface of the pancake and the edges look set, about 2-3 minutes.



7. Flip the pancakes and cook until golden brown on the other side, about 1-2 minutes more.



8. Remove from the skillet and keep warm while you cook the rest of the pancakes.



9. Serve with maple syrup, add on some fresh blueberries and sliced bananas (or any other toppings of your choice).
